Sweet Potato Oven Fries with Avocado Dip Recipe
Tuesday, September 1, 2009 at 10:35AM A friend made this as a side for dinner one night. Amazing flavors! She actually served crabcakes with it as well and the dip worked with it all!! If you have family members, like mine, who aren't a huge fan of sweet potatoes OR avocados, TRY THIS!! It's now requested!
Sweet Potatoes Oven Fries:
What you need:
2 large washed and scrubbed sweet potatoes ( I prefer unpeeled)
2 Tablespoons Olive Oil
1 teaspoon salt
dash of cracked black pepper
Preheat oven to 400 degrees. Cut sweet potato into wedges shaped like fries about 2 inches long and 1/2 inch thick. Too big takes longer to roast.
Toss in bowl with olive oil until well coated. Lay in single layer on baking sheet. Sprinkle with salt and pepper. Bake until tender, flip and brown until crispy. (about 20 minutes - serves 4 generously)
Avocado Dip: (Compliments of The Food Networks Ingrid Hoffmann)
Avocado Dip:

What you need:
1 avocado
1/3 cup mayonnaise
1/3 cup cream cheese
1 jalapeno, seeded and chopped.
2 scallions, white and light green part only, chopped
1 lime, juiced
Salt and freshly ground black pepper
Place the avocado, mayonnaise, cream cheese, jalapeno, scallions, and lime juice into a blender or small food processor. Blend for 1 minute or until you have a smooth paste. Season with salt and pepper, to taste. Serve as a dip for the Sweet Potato Oven Fries.
