Tilapia with Pesto, White Wine, and Tomato

My parents were in town visiting. I wanted to cook something healthy for my dad since he doesn't eat a lot of red meat. My husband picked up some tilapia on his way home from work. I knew the pesto and white wine worked so well together, I wanted to implement them again with this dish. I would gladly make this again and wanted to pass it along!

 

What you need:

* two fillets of Tilapia (or however much you need)

* fresh pesto (homemade or store bought fresh is always best)

* couple tablespoons of white wine

* tablespoon butter

* grape tomatoes or favorite tomato sliced)

 

Preheat oven to 350. Lay tilapia in glass baking dish. Evenly spread pesto on fish making a thin layer on top. Sprinkle the white wine over the fish so the dish has about 1/4 inch on wine on the bottom. Put a few tabs of butter on top of the fish every 4 inches or so.  Finish off with grape tomotoes either whole or sliced.

Bake for about 15-20 minutes or until fish flakes apart when forked.
