Black Eyed Pea Salsa Dip

 

We went to a friend’s house last Friday for dinner. They had a large bowl of this dip as an appetizer and it was about 1/3 done before dinner was served. This dip is refreshingly simple and perfect for a get-together, party, or just a healthy snack to have on hand at home in the fridge. This one was made with parsley, but I’m sure cilantro would work great too, that is if you are a fan like me! This recipe serves MANY because fills a large serving bowl!

 

 

 

 

 

What you need:

 

*2 14 oz cans of black eyed peas, drained

* 1 15 oz can white hominy, drain and rinse (separate until kernels are left)

* 2 medium plum tomatoes, chopped

* 4 green onions, chopped

* 4 cloves of garlic, chopped

* I medium green pepper, chopped

*1 jalepeno pepper, chopped

* ½ cup white onion, chopped

* ½ cup parsley, chopped

* 8 oz bottle of favorite Italian dressing

Combine all and let chill in fridge for 2 hours before serving

Serve with favorite tortilla chip.
